I didn’t expect okra to go this crunchy. Made with fresh okra and a simple dusting of yellow cornmeal the result felt like a snack from another planet.

- 1/2 cup yellow cornmeal

How to Make this
1. If using fresh okra, trim the stem ends and cut each pod in half lengthwise; if using frozen, thaw completely and pat dry with paper towels until mostly moisture free.
2. Put the okra in a large bowl and drizzle with 1 to 2 tbsp olive oil, tossing so every piece gets a little coating.
3. Add 1/2 cup yellow cornmeal, 1/2 tsp kosher salt and 1/4 tsp ground black pepper to the bowl (or use a zip top bag), then shake or toss until the okra is evenly coated, tapping off any big clumps of cornmeal.
4. Preheat your air fryer to 400 F for about 3 minutes so the basket is hot.
5. Place the okra in a single layer in the air fryer basket, dont overcrowd it, do batches if needed so they can crisp properly. If your basket sticks, rub a little extra oil on it first.
6. Air fry at 400 F for about 10 minutes, shaking or flipping the okra halfway through (around 4 to 6 minutes) so they brown on all sides.
7. Check for deep golden edges and a crunchy texture, cook an extra 1 to 3 minutes if you want them extra crispy or if your pieces are larger.
